Since opening in May 2022, Plosky’s has become a beloved destination for offering an authentic deli experience in the heart of the Rockies.
A new addition is a growing lineup of prepared foods offerings, perfect for busy households or those looking for a ready-made, locally made, hearty meal. These dishes are crafted with the same dedication to quality that defines the deli’s sandwiches. Favorites include Lasagna Bolognese and Beef Enchiladas crafted with Potter Farms beef, as well as soups by the quart, like Chicken and Dumplings and Matzo Ball Soup. Small sizes feed 2-3 people, while larger portions cater to families or dinner parties. David Eisenson, Plosky’s founder and owner, opened the deli for one simple reason: to serve exceptional sandwiches.
A huge factor in David Eisenson’s decision to open the deli was wanting access to an excellent Ruben in the Roaring Fork Valley, and now, it is one of the deli’s most popular items. His multi-napkin version features corned beef, Swiss cheese, sauerkraut, and thousand island dressing, stacked on perfectly marbled rye. The Pastrami on Rye is another highlight, with thick, tender pastrami paired with Swiss cheese, PSB (Plosky’s Special Blend) mustard, onion, and thick, sweetand-sour pickle chips on marbled rye. Every bite is a balance of smoky, tangy, and savory flavors.
For breakfast, the Bacon, Egg, and Cheese Bagel is an excellent delivery device for one (or many) of the unique hot sauces the deli has on hand.
